Raw Spring Sprout Salad (Vegan)

Ingredients
Cup Lentil Sprout Mix
Carrot Shredded
1/4 Head White Cabbage Thinly sliced
1/2 Head Celeriac Shredded
Bulb Fennel Thinly sliced
Dressing
1/2 Cup Olive oil Extra virgin
Limes Juiced
1Knob Ginger
Salt
Instructions
Prep time: 10Minutes
  1. Prepare all of the veg by grating and slicing.
  2. Stir through the Lentil Sprout Mix.
  3. Make the dressing… Place all dressing ingredients in a food processor and blitz until creamy.
  4. Taste and adjust seasoning.
  5. Stir through the dressing.

Allow to sit for 30 minutes before serving.
